A child of Burgundy, Michaël Felmann was born in Dijon. Always passionate about cooking, he used his school notebooks to copy out recipes, which he then adapted according to his inspiration. He then used his parents’ kitchen to try them out.
Always guided by his passion, it was only natural that Michaël should study cooking. After an exhilarating apprenticeship with chef Hernest Young in the kitchens of the Chapeau Rouge restaurant in Dijon, Michaël pursued his destiny in the kitchens of the Prefect of Burgundy, where he served high dignitaries from a wide variety of backgrounds.
For 20 years, our chef has put to good use every culinary secret passed down to him, developing his expertise and enriching his repertoire of recipes. Over time, he has forged his own personality, which is reflected in the menu we offer you today.
For over 10 years, Michaël has been cooking up a storm in his own restaurant in the Ouche valley, where he continues to surprise and delight his customers with his original recipes.

Michaël Felmann draws on Burgundy’s terroir to develop his culinary sensibility. Naturally curious, he is nevertheless interested in all the cuisines that inspire him on a daily basis.
His discovery of Spain was a revelation, and not just because his wife Marie-José is from there. The Iberian peninsula has become his heartland. Cooking is not a job like any other, and it’s a bit like his life that our chef puts on stage to convey his emotions through exceptional flavors.
